Meal Prep With Roasted Sweet Potatoes

Roasted sweet potatoes are a great way to meal prep. In addition to all of their amazing health benefits, they're easy to make and store well in the fridge.

Grab a bunch, chop them up, mix and match seasonings (I like to do 1/2 sweet and 1/2 savory), and bake until done. The result? The start to a week's worth of healthy meals.

From salad toppers to sweet potato cakes, here are some of my favorite ways to use pre-made baked sweet tomatoes:

For breakfast, try these gorgeous fluffy sweet potato breakfast bowls or a sweet potato breakfast skillet.

Sweet potatoes are great salad toppers. I really like this sweet potato, zucchini, and chickpea salad from Food52 and this roasted sweet potato and cranberry salad from Love & Lemons.

For a snack, how about these elevated mozzarella sticks (cheesy mashed sweet potato cakes) from Cafe Delights or some sweet potato hummus.

For dinner, I'm thinking sweet potato & black bean tostadas, curried sweet potato & chickpeas, or some sweet potato curry.
