Low-Carb Breakfast Meal-Prep




If you're anything like me, mornings are crazy. I try to squeeze a quick workout in before everyone wakes up (thank you Peloton). By the time I am done, and everyone is up, I am always (1) ravenous and (2) running short on time. Muffin tin frittatas are absolute life savers.

They are the perfect make-ahead / eat-later breakfast. Mix up the ingredients to keep things interesting, refrigerate, and enjoy up to four days later,
